I have been craving this chicken stir fry since forever. To maintain the nutrients, I added the vegetables last and turned off the heat after 1-2 minutes. I also used fresh ginger, garlic and rosemary to spice it up so there was no need to use the processed spices. Alternatively, you can use both fresh and processed this way you reduce the use of processed seasonings. Also, I did not use salt as I used Soy sauce, which contains enough salt.
Now what are you cooking and how are you maintaining the nutrients in the food for your immune system to fight of Covid-19?? Off to find myself banku to go with this.
Here is the method if you will like to give it try

  1. Heat the pan and add a teaspoon of oil.
  2. Then add chopped garlic and ginger to cook for 3 mins.
  3. Add 1- 2 tablespoon of soy sauce and allow it to cook for another 3mins.
  4. Then add the shredded chicken to fry.
  5. Add Grounded (blended) pepper and onion.
  6. Add remaining chopped ginger and garlic plus rosemary.
  7. Add water (50ml), cover and leave to simmer for 5-10mins
  8. Add your choice of vegetables- carrots, cucumber, onion, spring onions, green bell pepper and turn off the heat after 1-2mins
